Dairy products have an essential role in human nutrition. Unfortunately, they have an intensive impact on the environment. ProProtein aims to satisfy the protein need for the growing human population by providing nutritious and tasty dairy products but in a new, environmental-friendly way. We are developing a technology to produce dairy proteins by fermentation with yeast, without the need for cattle farming. We use synthetic biology to create a yeast strain that is able to synthesize dairy proteins. These proteins are perfect for making animal-free cheese, yoghurt or other dairy products, that have the texture and flavour that you have dreamt about.
